Mezcalero Oscar Hernández Santiago customarily infuses seasonal fruit with agave during distillation, a practice honoring the Priest of Matatlán. For this particular mezcal, pineapple is the chosen fruit, complementing espadín agave harvested from Oaxaca's Central Valley. The spirit undergoes a double distillation and is presented at 45% ABV.
